Eggplant, Tomato and Pesto Toast
1 fresh baguette or sliced bread
Eggplant baba ganoush
Fresh tomatoes
Parmesan shavings
Fresh pesto leaves
Cut the bread in thin slices. Toast the slices and top with eggplant purée, a piece of tomato and parmesan shavings. Add one pesto leaf per toast.
Serves 4.
