Gratin de courgettes / Zucchini Gratin
1 c. heavy whipping cream
1 c. Swiss cheese, grated
3 eggs
1/2 c. thinly sliced onions
1/4 c. parsley
Chives (optional)
5 or 6 medium zucchini
Slice zucchini 1/4 to 1/2 inch thick. Cook in salted boiling water for 2-3 minutes. Drain well. Arrange slices in greased baking dish, covering each row with the thinly sliced onion. Salt and pepper to taste. Beat eggs, add cream, cheese and herbs. Pour over zucchini. Cook at 425º F for approximately 30 minutes or until golden brown.
Serves 6.
