The passionate staff will share insights into the meticulous care of the estate’s vineyards, letting you witness firsthand the art of hand-harvesting and the selection of the finest grapes.
The winery itself is an ecological marvel made from hemp bricks, topped with a green roof, and boasting a carbon-negative status. Thanks to its unique construction, the innovative winery maintains a stable temperature in the cellar without the need for heating or cooling. In the cellar, watch the transformation of grapes into award-winning wines that embody the character and terroir of the Languedoc region.
Recognized as “One of the five most environmentally friendly wineries” by Wine Spectator and honoured with Robert Parker’s Green Emblem award, Château Maris exemplifies a commitment to sustainability.

The Grand Café Occitan, located next to the estate, is a charming restaurant where visitors can enjoy delicious, locally sourced food paired perfectly with Château Maris wines. The café offers a menu inspired by the flavours of the Occitan region, with an emphasis on fresh, seasonal ingredients. Dishes such as grilled lamb, homemade terrines, and Mediterranean-inspired tapas are expertly paired with the estate’s wines, creating a feast for both the palate and the eyes.
Dining at the Grand Café Occitan is an opportunity to savour the flavours of the South of France in a charming setting.
The café is open Thursday -Sunday in the winter and Wednesday – Sunday from June- September. The outdoor terrasse is open April – October depending on the weather.
