Dine Under the Stars with a Celebrity Chef  

In the heart of the Pic Saint Loup wine appellation, Domaine Uma hosts magical twilight dinners with a chef. 

While the origins of Domaine Uma in Valflaunès, Languedoc, can be traced back 200 years to the history of Domaine de Chambon, and then Château de Valcyre in the following century, since 2021 the new owner, Emmanuel Clausel, has been working to bring the estate back to life. 

This summer, Domaine Uma hosted a series of star-studded dinners with five renowned chefs, invited as guests in residence. 

Les Dîners Étoilés invites epicureans to share an art de vivre experience, combining the very best in gastronomy and oenology, in the exceptional setting of the Pic Saint Loup. 

The next chef to host the dinner under the stars is Hugo Bourny on August 17, 2024. 

Bourny is a chef at Lucas Carton in Paris and winner of a Michelin star. This 5-course, country-style dinner will close the season of star-studded dinners. It will be accompanied by the finest vintages from the Uma estate, selected by cellar master Turner.

Passionate renovation

The renovation of the winery is the work of architect Florence Clausel-Borel and Sara Castagné (Concepto). In place since 2023, this work illustrates a quest for elegance and precision, with timed lighting adapted to the surrounding flora and fauna. As well as the design and lighting, the raw stone gives the site a calm, sober feel. A central staircase leads to a laboratory and the Wine Bar, designed as a bistronomic tasting area open to the public in all seasons, with a terrace in the heart of nature. 

Some 18 red and white grape varieties are planted and replanted on the 120-hectare estate, which includes 40 hectares of vines, 60 hectares of garrigue and an olive orchard. It is also home to cellar master Australian Karen Turner who has worked as a winemaker in some of Europe’s most prestigious wine regions before settling in Languedoc in 2003. Turner was awarded Best Woman Winemaker in Japan in 2016.

No fewer than 13 bistronomic cuvées, as well as a gin with notes of pepper and citrus fruit, are created by cellar master Karen Turner. Domaine Uma also produces a local olive oil that enhances the terroir. Rich in this unique environment, the Clausel family aims to create links between wine, the art of living and gastronomy.  

Price for the Dîners Etoilés: €240 per person, including wine and food pairings.
